- Add your spices and Thai paste and cook for a few minutes to release the flavours into the pan.
- Add your coconut milk and bring to the boil.
- Into the pan add your soy sauce, brown sugar, peanut butter and reduce to a simmer until the curry has thickened and veg is cooked through.
- Place your chicken breasts into the oven and allow to cook through till they reach 75 degrees Celsius. Remove and allow rest.
- While the curry is reducing, bring a pan of salted water to the boil and add your rice.
- Slowly cook your rice on a gentle heat until fully cooked.
- Drain and set aside
- Once your curry has reduced. Add finely chopped coriander, lime zest, lime juice and stir into the pan.
