Instructions to make Homemade Peri Peri Chicken and Spicy Rice:
- To Make the Peri Peri Marinade, roughly dice your sweet pepper, red onion and garlic and sweat off in a pan with oil.
- Once softened, remove the seeds from your chillies and chop. Add to the pan alongside the lemon juice, olive oil, hot paprika, oregano and chilli flakes.
- Season with salt and pepper, add to a blender and blend until smooth. Set aside and allow to cool slightly.
- Marinade the chicken breasts with the peri peri sauce and set aside.
- For the spicy rice, dice your red pepper and white onion to a 1cm dice and soften in a pan with olive oil.
- Once soft, add your turmeric and smoked paprika and cook for a 1 minute.
- Add the rice into the pan and allow to toast for a 1 minute while stirring.
- Add the chicken stock and an extra 100ml of water and bring to the boil. Check the seasoning and adjust. Boil for 5 minutes
- After 5 minutes, stir in the peas and switch off the heat. Cover with a lid and allow all the liquid to absorb into the rice until cooked.
- Pre heat your oven to 180 degrees Celsius. While the rice is cooking, seal your marinated chicken in a hot griddle pan, sealing all sides. Form a criss cross affect and finish in the oven until the chicken reaches 75 degrees.
- Once cooked, slice the chicken or leave whole and serve with the rice, a choice of salad and extra peri peri sauce if you want it a little hotter.
