Instructions to make Black Glutinous/Sticky Rice Porridge:
  1. Wash & Soak glutinuos or sticky rice with slightly warm water. Leave it to soak & soften overnight. Soaked glutinous rice will shorten the cooking time.
  2. In a pot, cook soaked rice with enough water over HIGH HEAT. Cooking technique is similar to cooking congee. Bring it to a good boil and leave it to boil for 5 mins (at least). Rice grains should be soft by now but not starchy. Turn the heat to low and simmer until this rice grains break or split. Remember to stir from time to time, add little water if necessary & Continue cooking the rice until it turns starchy (not watery). - (see recipe)
  3. Add coconut milk last. Add salt and Sweeten with coconut sugar or white sugar. Stir well. Adjust taste accordingly. Continue to Simmer for a few more minutes then turn the heat off. Serve immediately. For a creamier dessert, spoon some cream or coconut cream over your sweet glutinous rice porridge.
  4. Notes: You can also add some mung beans, Adzuki beans or sago to your sweet glutinous rice porridge. Alternatively, you can Prepare this porridge in pressure cooker or slow cooker. Adding Pandan leaves to your rice pot is a bonus, if you hv them.
