  17. Prepare 1 teaspoon chilli powder
  18. Get 1 teaspoon cumin seeds
  19. Get 1/2 teaspoon mustard seeds

Steps to make Pineapple Rice:
  1. Heat ghee in a wide bottom pan and fry the cashews until lightly golden. Remove from ghee and set aside.
  2. In the same pan add oil, cumin seeds, mustard seeds and curry leaves. Once it starts fluttering add ginger, garlic, green chilli paste and onions. Sauté until the onion is translucent. Add in pineapple and capsicum and cook until pineapple is caramelised and liquid evaporated. It should take about 3 minutes. Add in cashews, raisins,salt, turmeric, chilli powder and garam masala.
  3. Add the rice to the pan and stir to combine. Cook until the rice is hot, stirring occasionally. Add half chopped coriander leaves and mix well. - Squeeze the juice of lime and mix. - Transfer in a serving dish and garnish with coriander leaves.
