Instructions to make Cherry Plum Spiced Chutney:
  1. Heat up a saucepan over a medium high heat and add in the cherry plums plus the sugar. Simmer until the plums have softened and completely broken down into almost liquid.
  2. Remove from the heat briefly and pass through a sieve over a large saucepan or bowl until you are left with the juice and some pulp and then discard the stones and skins. Return the pulp/juice to a low heat. Allow to simmer very gently. Stir occasionally.
  3. In a small frying/skillet pan add 1/2 tbsp oil and the onions. Fry gently until turning translucent. Add the chillies in with the gently simmering plum pulp/juice. Stir.
  4. Add the garlic in with the onions along with all of the dry spices and herbs. Fry until aromatic for around 30-40 seconds.
  5. Add the aromatic onions in with the plums. Stir through. Add the vinegar and the honey plus the salt to season. Simmer on a low heat for a further 8-10 minutes to allow the flavours to infuse. Remove from the heat and allow to cool. Pour into a sterilised jar. Keep in the fridge. The chutney should last 2-3 weeks.
