- In a pot add mutton, ginger, garlic, 2 onion sliced, whole spice, salt, cumin seeds, fennel seeds, coriander seeds, button red chillies and water. Now let it cook until it mutton tenders and a aromatic stock is ready
- Now strain the stock in an another pot and keep aside
- Now in another pot, heat 1/2 cup oil and fry remaining onions till golden brown and take it out.
- Then in the same pot add mutton and fry for 2 mins and then add 3 cups of stock, let it boil
- Now add soaked rice, handful of raisins, pine nuts, almonds, cashews and jullian carrots and let the rice cook properly and cover it with the lid
- In a frying pan heat oil and add chopped nuts, jullian carrots and raisins and fry for 3-4 mins add sugar and water 3tbsp and cook for about 5 mins until the sugar dissolves completely
- Now garnish the Pulao with fried onions, fried nuts, fried raisins and fried carrots. Serve hot
