- Add the potato. Sauté for about 2 mins. Add the stock so the vegetables are covered. Season. Bring to the boil. Reduce heat, put the lid on and simmer for about 15 mins.
- Add the garlic leaves. Then blend in a blender or with a hand-held blender.
- Squeeze in some lemon juice. And check the seasoning.
- Pour the soup into bowls. Add a generous dollop of creme fraiche - stir it through or leave on the top. Sprinkle with lemon zest if using. Enjoy 😋
