- In a pan heat oil, add chopped gingers, minced garlic, red chillies, spring onion bulbs sliced and sauté until little brown in colour, add mushrooms and little salt
- Cook mushrooms until moisture is released. Add vinegar, soya sauce, and sweet red chilli sauce, stir. Add few julienned carrots, stir
- Add stock, add noodles and the ramen noodle packet, stir, add spring onion greens chopped little, stir, set aside
- Plate with halved boiled eggs, carrot julienned, spring onion green chopped, drizzle soya sauce on the boiled eggs, serve
