  1. Pre heat your oven to 190 degrees
  2. To make the pastry. Combine your flour and softened butter to form fine breadcrumbs. Add a pinch of salt and a little water to form a smooth dough. Don’t work the dough too much as this will make it more crumbly.
  3. Cling film your pastry and chill in the fridge for 30 minutes
  4. To make the chilli, dice your onion and peppers at a 2 cm dice and add to a pan with a little olive oil.
  5. Gently cook and soften for 5 minutes, adding your chilli and garlic to the mix once the onion and peppers are soft.
  6. Add in your thyme, paprika and cumin and combine. Cook out your spices for a few minutes.
  7. Remove your onion and pepper mix from the pan and set aside. In the same pan, add a little olive oil into the pan and cook off your minced beef with a little salt and pepper
  8. Once the beef is cooked, add your onion and pepper mix back into the pan and combine.
  9. Squeeze your plum tomatos in a bowl breaking down the sauce and add into the pan.
  10. Bring to the boil and simmer for 45 minutes, adding in your drained and rinsed kindney beans.
  11. Once the chilli is cooked, check the seasoning, chill and set aside.
  12. Once the dough is chilled. Remove from the fridge and roll out to around 0.25mm thick on a floured surface. You may need to add a little water to the dough to prevent it cracking before rolling out.
  13. Cut out your pasty using a small side plate or cutter and set aside on a lined baking tray.
  14. Once the chilli is chilled, add 3 tablespoons into the centre of the pastry.
  15. Using your egg wash, brush half of the pastry cases edge and gently pull over the pastry to form your pasty. Seal with a fork or crimp to prevent the filling leaking out.
  16. Egg wash the pastry completely. This will allow a golden finish to the pasty.
  17. Bake for 45 minutes of until golden brown and serve with a fresh salad of your choice.
