- Prepare Hard spices:-
- Get 2-4 sticks cinnamon,
- Prepare 4-5 green cardamoms
- Get ,4-5 cloves,
- Prepare 1/2 teaspoon shahi jeera (black cumin)
- Make ready 1/2 bunch coriander leaves
- Make ready 3-4 springs mint leaves
- Get 1 tablespoon ghee
- Prepare as required mint raita (see recipe)
- Take as required mirchon ka salan (see recipe)
Instructions to make Chicken dum biryani box:
- Wash & soaked basmati rice in warm water for 30 minutes with all hard spices & salt. Further fry onions barista until golden brown. Will use the fried onions oil for cooking too. Prior wash chicken with vinegar & Marinate the chicken also for 30 minutes with some fried onions oil,yoghurt & all spices,mint & coriander leaves,lime juice.
- After 30 minutes start cooking rice cook rice until 70-80% and drain the water in another nonstick wok pop in the marinated chicken yakni with oil generously and gradually set a layer of cooked rice add saffron milk,yellow food colour,ghee prick flipped spoon to make space in 3-4 spots so that the steam gets even while cooking.
- Cover the lid and steam it for 10 minutes on high flame burner rotating the wok with its Handel or a kitchen towel then simmer it for 20 minutes and off the flame burner. Let it rest for 10 minutes then mix it to serve.
