Steps to make Chicken Penang Curry:
  1. Pre heat your oven to 180 degrees Celsius.
  2. Season your chicken breasts with salt and pepper and seal on a hot griddle pan forming a criss cross effect. Set aside
  3. Dice your courgette, aubergine, peppers and onion into 2cm dice and add to a hot pan with a little oil.
  4. Season with salt and pepper and slightly colour the veg stiring occasionally.
  5. Add your spices and Thai paste and cook for a few minutes to release the flavours into the pan.
  6. Add your coconut milk and bring to the boil.
  7. Into the pan add your soy sauce, brown sugar, peanut butter and reduce to a simmer until the curry has thickened and veg is cooked through.
  8. Place your chicken breasts into the oven and allow to cook through till they reach 75 degrees Celsius. Remove and allow rest.
  9. While the curry is reducing, bring a pan of salted water to the boil and add your rice.
  10. Slowly cook your rice on a gentle heat until fully cooked.
  11. Drain and set aside
  12. Once your curry has reduced. Add finely chopped coriander, lime zest, lime juice and stir into the pan.
  13. Slice your chicken breasts and serve alongside the rice and curry sauce.
