  1. Begin cooking the pasta according to packet instructions in boiling salted water. As it cooks, heat up a frying pan or skillet over a medium heat and add in the oil.
  2. Once hot add in the onions and fry for 1-2 minutes then add in the red bell pepper. Fry for a further couple of minutes. Add in the paprika, garlic and oregano. Stir through. Add the chopped tomatoes. And turn down the heat to low.
  3. Once the pasta is al dente drain it off reserving a little of the pasta water and add it in with the veggies. Stir it all together. Season well with salt and pepper. Remove from the heat and stir through two tbsp of crème fraiche until a creamy sauce is created.
  4. Heat up your grill. Add the pasta mix into a heatproof dish then scatter over the cheese. Grill until bubbling and golden. Serve up scatter over scumbled tortilla chips then add your choice of toppings such as guacamole, crème fraiche and chillies. Enjoy! ☺️
