- Preheat the oven to 180C/355F. Don’t peel the sweet potatoes, but wash them well. Cut each into six big slices or cubes. Place in a bowl and mix with some olive oil, salt and pepper. Place on a baking sheet lined with parchment paper. Bake for 20 minutes, then flip the potatoes and continue baking for another 15-20 minutes. They should become soft with the skin peeling off easily.
