- Melt 1 tbsp coconut oil in the microwave and add 2 tbsp of rice malt syrup
- Combine Coconut oil and rice malt syrup with all dry ingredients except for the chocolate, goji berries, pistachios and cinnamon
- Spread the mixture onto a large baking tray lined with baking paper and bake for 15 mins, mix well then bake for another 10 minutes or until golden brown
- Remove mixture from the oven and mix in the last tbsp of rice malt syrup and cinnamon
- Wait until the mixture is completely cool and add goji berries, pistachios and chocolate
- Store in an airtight container.
